On the afternoon of June 25, 2020, the Ministry of Education and Training held a ceremony to award the Bao Son 2019 and the special Bao Son award of the year 2020 for 2 Projects of “Research and Application of Sublimation Drying Technology in Vietnam” by Assoc.Prof. Nguyen Tan Dung - Dean of Faculty of Chemical and Food Technology, Ho Chi Minh University of Technology and Education and his team along with of the project “Research and manufacture of real-time RT-PCR biological kit to detect SARS-CoV-2 causing Covid-19 pandemic” implemented by Assoc. Prof. Ho Anh Son and his partners from Military Medical Academy.
Bao Son is an award organized by Bao Son Education Fund of Bao Son Group in collaboration with the Ministry of Education and Training to honor authors who own inventions and applied scientific researches, which contribute and positively affect the cause of socio-economic, culture and Vietnamese development.

The project “Application of sublimation drying technology in Vietnam” has been carried out by Assoc.Prof. Nguyen Tan Dung for 20 years, from 1999 to 2019, continually improved through many versions. Each version has been greatly improved by the research team in terms of design, appearance, technical quality and energy saving. In addition, the automatic measurement and control system of the drying process using Internet of Things (IoT) makes the drying system more convenient and feasible, therefore, it can be used anytime and everywhere.

Regarding the idea of implementing the project, Assoc.Prof. Nguyen Tan Dung shared that he started his career as an engineer working for a foreign company in the field of refrigeration and air conditioning and participating in the design and manufacturing process of cooling systems within 4 years. During that time, he learned in-depth knowledge in cryogenic engineering and deep freezing. Later, he moved into the field of education and research, nurturing a desire to create new technological products that benefit the community and society.
His project “Application of sublimation drying technology in Vietnam” with the research team was formed in 1999. Over the course of 20 years from 1999 to 2019, he and his team went through different emotions ranging from disappointment to joy. Up to now, DS-xx sublimation drying systems have been deployed nationwide.
Dr. Nguyen Tan Dung added that with products of high economic value such as Lingzhi, cordyceps, bird’s nest, royal jelly, sublimation drying is considered the optimal solution. Because if those are preserved by conventional freezing or drying method, the natural properties of the product will not be well-maintained. The sublimation drying process is carried out in an environment with low temperature and pressure; the temperature is below the crystallization point. Therefore, the protein of the ingredient will not be denatured; the lipid is not oxidized; the carbohydrates are not gelatinized; the biological active elements, vitamins and minerals are not destroyed; the color and taste are almost unchanged.
Regarding the achievement of the Bao Son Prize, Mr.Dung said the award does not only brings joy and pride to himself and the team but also to Ho Chi Minh University of Technology and Education - where he works. He hopes the project will be widely applied in production, helping the community and society, contributing to the development of the business economy, the country’s economy, the development of national science and technology as well as for education and training to create qualified human resources for society.
